CHERRY SLICE

Cherry slice is definately my favourite slice of all time! Love a good Cherry Ripe bar just the same... 
Way back when ...  (years ago when the metabolism was kinder to me) I used to go to one particular bakery every Saturday lunch time and buy this religiously. 
Since then I moved to the Gold Coast and about a year ago decided to go in search of this in bakeries here on the coast. Would you believe I couldn't find it??!?!!
That really stubborn DIY streak in me made it myself.
After I posted a pic of this on the Hamptons Style FB page asking if it could be frozen I decided to share the recipe here:



BISCUIT BASE

I used a recipe from memory that I make jam drops from.

* 1/2 cup butter
* 3/4 cup sugar
* 2 eggs
* Vanilla essence
* 1 1/2 cups SR Flour


Beat butter & sugar to a cream, add eggs and vanilla. Mix in flour and press into a dish. I found a 22cm square porcelain dish works well. Bake at approx. 160 until brown (10 mins or so). 

CHERRY FILLING

* 1 can condensed milk
* 1 small packet glazed cherries
* 1 1/4 cups coconut
* Pink food colouring

Chop cherries in either halves or quarters. I do both to add a variety of texture throughout the filling layer. 
In a bowl add the condensed milk and coconut. I play with the amount of coconut to get a consistency that is not too sloppy. You may need more or less of the coconut. Stir condensed milk and coconut until the right thickness, then add a few drops of food colouring and cherries. Stir softly and pour on top of the baked biscuit base. Pop into the fridge while you make the top chocolate layer. 

Melt approx. half a block of dark cooking chocolate in a bowl over simmering water in a saucepan and pour over your cherry filling. You can make the chocolate as thin or thick as you personally like it. And that's it my friends! One Cherry slice. 

Now I'm no Donna Hay and some of the quantities may not be exact (flour and coconut) but
this is delicious! You have to try it... 
And at this point I just decided to go out for a run this afternoon after I just had ANOTHER piece with a cappuccino. Enjoy! I am...
